Chicken Pesto Meatballs

If you like pesto & prefer chicken over red meat, then this is a must try for you! I love pesto & prefer chicken to red meat & this recipe has them both! Simple yet tasty, just as we like our recipes to be!

You will need:

  • 2 chicken breasts (blitzed in a food processor)
  • 40 gr oats (also blitzed)
  • 1 egg
  • 25gr grated parmesan cheese
  • 30gr pesto (feel free to add experiment with more if you like the flavour - i made it more subtle as it was first time for the kiddos to try)
  • 1 tsp onion powder

Mix all ingredients together & form small balls.
Bake at 180 for 15 minutes (or longer depending on the size you make)!
