Pizza Boats - Peinirli

One of the most delicious snacks…

For the dough

  • 350 ml water (room temp
  • 9 g dry yeast
  • 1 pinch sugar
  • 500 g hard flour
  • 100 g whole-wheat flour
  • 10 g salt
  • 1 teaspoon(s) olive oil

Add water, yeast & sugar in mixer’s bowl and whisk by hand. Add flour & salt and bet with the mixer for 5-9’ until dough pulls back from sides of bowl. Transfer the dough into an oil brushed bowl, cover with damp towel or cling wrap and set aside for 1-1.5 hrs (it should double in size. Divide the dough into 10-15 pieces (depending on how big or small you want them), roll each into a ball and the roll out into small oval shapes.

For the peinirli filling

  • 50 g butter
  • 200 g gruyere cheese, grated
  • 100 g cream cheese
  • pepper
  • 5 slices bacon, cut into cubes
  • 50 g butter, melted, for brushing
  • oregano, fresh, optional

Smother the dough pieces with butter. Combine the cheese, cream cheese and pepper in a bowl until evenly mixed. Add any herbs you like. Spread your cheese mixture onto the dough and add bacon. To create the “boat” simply raise the edges and fold the ends inward. Bake them for 15-20’ (baking time will vary depending on the size you make them). Brush with melted butter while still warm, sprinkle with oregano & serve!
